James says: “Although simple to follow, this recipe requires longer, slower cooking to make the meat just right; in fact you’re best to start preparing your pork 48 hours before you’re intending to serve it, to allow the flavours to fully develop. On the day you’re dishing up, you’ll need to allow for just under 6 hours of cooking time to achieve the desired tenderness. The result? An aromatic, succulent main dish that will have everyone clambering for more.”
