This time of year is all about getting back out into the garden. With all the sunshine we’ve been having, my parsley has bolted and the Swiss chard beds were ready for clearing, so nothing goes to waste. The best leaves go straight into a simple garden shakshuka, while the trimmings keep the hens happy too.

There’s something incredibly satisfying about having the greenhouse right next to the chicken run — fresh herbs, seasonal greens and proper homegrown cooking all in one place.

This green shakshuka is the perfect brunch after a morning in the garden. Softened onions, wilted chard, warming harissa and baked eggs finished with creamy feta, fresh herbs and toasted sourdough on the side.

Simple seasonal cooking at its best.
