Enjoy a Summer Barbecue

There’s nothing quite so British as someone steadfastly tending a barbeque while clinging to an umbrella. The weather over the past few weeks has been a mixture of beautiful hot sunny days and sudden downpours, but don’t let that put you off from enjoying the highlights of a Summer barbecue!

Mango & Chilli Salsa
1 ripe Mango (softish), chopped into small cubes
1 Red Pepper, chopped into small cubes
1 Red Chilli (seeds removed), finely chopped
Juice of 1/2 a Lime
Handful of Coriander, finely chopped
A few Mint leaves, finely chopped
Combine these fresh ingredients in a bowl and mix well, then leave for at least an hour and serve at room temperature. Those who prefer less of a kick can feel free to add or subtract the chilli and lime juice to taste.
