Instant sunshine on a plate, whatever the weather.Prawn and chorizo skewers (serves 6 as a small tapas dish)
280g cooking chorizo sausages
200g raw tiger prawns
a pinch of sweet paprika
2 good glugs of cider
lemon, cut into quarters
chopped flat leaf parsley and coriander
First cut your skewers down to size so that they will be the right length for a little mouthful of tapas.
Slice the chorizo into thin slices no more than 1cm thick. Heat a frying pan and fry the chorizo slices until they begin to take on some colour and brown on the sides. Add the prawns to the pan with the paprika and cook prawns until pink and succulent.
To finish, pour the cider into the pan and deglaze, allowing the liquid to bubble and reduce a little. The cider will create a sticky glaze for the prawns and chorizo.Spear a slice of chorizo with the prepared skewers and top with a prawn. Place onto the slate serving boards and gently drizzle over some of the cider glaze onto each skewer. Garnish with some chopped flat leaf parsley and coriander for a touch of greenery and a lemon cut into quarters for squeezing over the prawn skewers.
