Coffee with Friends

There is nothing better than a good morning coffee. Personal preference maybe, but slowly waking up with the potent smell of coffee beans is a well-loved moment of mine. This is even more enjoyable with company, sharing a steaming pot of coffee and indulging in a naughty slice of chocolate cake!
When having friends over for a catch up and gossip, I really like to host. I find that having a pot of coffee on the table with a few nibbles really gets the conversation flowing. My favourite Coffee Pot has got to be this Enamel Coffee Pot in Flint. Not only does the light grey go perfectly with my décor but it also injects a touch of French style into my kitchen. I like to leave the coffee to brew in the pot as I find it keeps its heat and packs in lots of flavour. I just serve with some milk in a Vintage Milk Bottle and Sugar in a Glass Spoonful of Sugar Dispenser for people to serve themselves; these little touches really help to make the occasion feel special.

Weighing everything together is never a chore when I’m using my Garden Trading Weighing Scales, which are not only extremely efficient but look professional on my kitchen side. You will need:
100g Plain Flour 1 ½ tsp Baking Powder
20g Cocoa Powder A Pinch of Salt
140g Caster Sugar 40g Unsalted Butter
120ml Milk 1 Egg
¼ tsp Vanilla Extract 12-hole cupcake try line with paper cases
- Preheat your oven to 170C (325C) Gas 3.
- Put the flour, cocoa powder, sugar, baking powder, salt and butter in a bowl and beat until you get a sandy consistency and everything is combined.
- Whisk the milk, egg and vanilla extract into a separate bowl and slowly pour about half into the flour mixture. Beat to combine and slowly add more of the mixture until smooth, do not over mix.
- Pour the mixture into the paper cases until two-thirds full and bake in the oven for 20-25 minutes, or until the sponge bounces back when touched. A skewer inserted in the centre should come out clean. Leave the cupcakes to cool slightly in the tray before turning out onto a wire cooling rack to cool completely.
- When the cupcakes are cool, spread some frosting on with a pallet knife or piping bag and decorate as you desire!
